Here’s a rhubarb recipe for something other than bars or pie!

Rhubarb Nut Bread

3 c. packed brown sugar
1 ½ c. oil
2 eggs
2 c. milk + 4 tsp. Vinegar
2 tsp. Vanilla

Mix. Add:

5 c. flour
2 tsp. salt
2 tsp. baking soda

Add:

3 c. diced rhubarb
1 c. chopped nuts (opt.)

TOPPING:
1 c. sugar
2 T. butter

Mix ingredients well. Pour into 3 well-greased bread pans. Mix and sprinkle the topping over each loaf of bread. Bake at 350° for 1 ¼ hours. Cool short time, then remove from pans before completely cooled.
