It’s definitely soup weather, and this simple one can help warm you up on a cold day!

Simple Potato Soup

1 ½ c. chopped onion
4 c. cubed potatoes
4 c. chicken broth; OR 3 chicken bouillon cubes dissolved in 4 c. boiling water
1 ⅔ c. (or 1 lg. can) evaporated milk
2 T. butter
½ tsp. salt

Put onion, potatoes and chicken broth in large pan and cover. Cook until spuds are tender, approximately 20 minutes. Add milk, butter and salt; heat to serving. DO NOT BOIL!
