Warm up on a cold day with this hearty vegetable soup!

Vegetable Soup

8 cups basic broth
1/2 cup onion, chopped
1 medium potato, diced
1/4 cup barley
1 carrot, peeled and sliced
2 stalks celery, diced
1 pound can tomatoes, not drained
salt and pepper to taste

Optional –
1   5 oz. can peas
1   5 oz. can corn
1 Tbs. tomato paste

Combine all ingredients and simmer for about 1 hour.  Taste and adjust seasonings.  You may add optional cooked, drained vegetables at the end of the cooking period.  Add and simmer an additional 15 minutes.  Add tomato paste if you wish a stronger tomato flavor.

Makes 8 – 10 cups.
