This week we’ve got a recipe for a cake that was made by communal cooks in several of the Amana Colonies:

Sunshine Cake

7 eggs, separated
2 teaspoons grated lemon peel
¼ teaspoon salt
1 ½ cups powdered sugar
1 cup flour

Preheat oven to 325°.
Beat egg yolks and lemon peel until frothy. Set aside.

Beat egg whites and salt until foamy. Slowly add sugar and beat until egg white begin to stiffen. Gently fold egg white mixture into egg yolk mixture. Sift flour directly into bowl and fold. Pour batter in an ungreased 10-inch tube pan. Bake 30 to 40 minutes. When cool, sprinkle with powdered sugar or glaze with vanilla frosting.

Note: Different, though very similar, recipes for sunshine cake were found in recipe journals kept by communal cooks in South Amana and Amana.
