Recipe: Sour Green Beans

Do you have canned green beans you’d like to use up, or want to be prepared for your next harvest? Check out this recipe and make sour green beans a part of your well rounded dinner menu!

Sauere Grüne Schnittbohnen – Sour Green Beans

1 qt. canned sour green beans (see below)
1 tablespoon lard
1 tablespoon flour
1 tablespoon minced onion
Salt and pepper to taste

Bring beans to boil. Melt lard, add flour and stir until smooth. Add onion and brown. Add to boiling beans and cook until tender. Season. As a variation, 1 cup of cooked navy beans may be added. Serve hot.

Sauere Grüne Schnittbohnen – Sour Green Beans

Roughly 1 qt. green string beans, thinly sliced lengthwise
¼ cup salt
4 ½ cups water
½ cup vinegar

Blanch sliced beans and pack into glass jars. Combine water, vinegar and salt in above proportions, bring to boil and pour over beans, filling jar. Seal. Prepare according to recipe above; not eaten as a relish.
