Recipe: White Sugar Marchpane Cookies

Get out your heart shaped cookie cutter and get ready to make your Valentine some of these traditional cookies!

Marzipan – White Sugar Marchpane Cookies

8 eggs
4 ½ cups white sugar
8 cups flour
1 teaspoon soda
½ teaspoon baking powder

Beat eggs until thick and light. Add sugar and beat again with rotary egg beater or electric mixer for 15 minutes. Add flour sifted with soda and baking powder. Place the dough on a floured board; taking part of it at a time, roll out to about quarter inch thickness. Cut into fancy shapes with cookie cutters. With rim of thimble or similar object, make some decorative, geometric impressions on top of cookies. Place the cut-out cookies on a towel-covered board overnight in a cool place. Place on grease cookie sheet and bake in 325 degree oven for 10 or 12 minutes. These cookies should not be browned, only nicely baked through. Store in tightly covered container.
