Chicken Salad
5 cups cubed cooked chicken
2 cups diced celery
Salt, to taste
Pepper, to taste
¾ to 1 cup Miracle Whip salad dressing
2 to 3 tablespoons lemon juice
3 to 4 tablespoons sweet pickle relish
4 to 5 hard-cooked eggs (cut-up)
Combine chicken, celery, pickle relish, and seasonings. Mix in salad dressing and lemon juice. Fold in eggs and chill thoroughly. Garnish with egg slices and/or olives or parsley. (May be served on crisp lettuce.)
