3 med. zucchini
1/2 onion, chopped
1 sm. green pepper, chopped
Salt and pepper
1 c. bread crumbs or cracker crumbs
1 can condensed cream of chicken soup
Parmesan cheese
1/2 lb. ground beef
Slice zucchini thin into buttered 2-quart casserole. Add chopped onion and green pepper. Season lightly with salt and pepper. Sprinkle with cracker crumbs and pour undiluted soup over all. Sprinkle with Parmesan cheese and bake at 325 degrees for 45 minutes. Meanwhile brown beef, drain off fat and season with salt and pepper. Sprinkle baked casserole with beef and return to oven for 15 minutes. Serves 4.
