This sweet bread is very moist and colorful with a tasty topping!
Recipe: Blueberry-Orange Bread
2 c. sifted flour
1 tsp. baking powder
¼ tsp. baking soda
½ tsp. salt
1 c. sugar
1 egg, well beaten
2 T. butter or margarine, melted
1 T. lemon peel¾ c. orange juice
1 c. blueberries, rinsed and drained
ORANGE TOPPING:
2 T. honey
2 T. orange juice
1 tsp. orange peel
Mix together flour, baking powder, soda, salt and sugar. Combine egg, butter, rind and juice and add all at once to flour mixture and blend lightly (about 25 strokes). Fold in blueberries and pour batter into greased pan (3 ⅝ x 10 ¼ x 2 ⅝ inch). Bake in 350° oven for 1 hour and 20 minutes. Cool 5 minutes, remove from pan and brush with orange topping. Yield 1 loaf. Topping: Combine ingredients and mix. This is very tasty, moist and colorful. I usually use smaller nut bread pans.
