Recipe: Date Nut Cookies

This week’s recipe comes from West Amana via the Seasons of Plenty: Amana Communal Cooking cookbook.

Recipe: Date Nut Cookies

1 cup vegetable shortening

1 cup granulated sugar

1 cup brown sugar

3 eggs, beaten

3 cups flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon vanilla

1 cup nuts, chopped

½ pound dates, chopped

Preheat oven to 350°. Cream shortening and sugars, beating until fluffy. Add beaten eggs. Stir flour, baking soda, baking powder, salt and vanilla into batter, mixing well. Add chopped nuts and dates. It is best to stir these in by hand.

Drop by rounded teaspoonfuls onto greased cookie sheet. Bake about 10 minutes.

Makes about 4 dozen cookies.
