Recipe: Egg-Ham Brunch Dish

This recipe was submitted by Pam Schnittjer, to be included in the West Liberty Sesquicentennial Cookbook. I know Pam through church and she was the nurse at the West Liberty Elementary School when I taught there. This recipe is very similar to one I make here at Zuber’s. I sometimes add onion, red and green peppers. You can also make this with sausage.

Egg-Ham Brunch Dish

8 to 10 slices buttered bread, crusts removed
2 ½ c. chopped, cooked ham
1 c. grated Colby cheese
2 tsp. prepared mustard
5 eggs
2 c. milk
¼ tsp. salt
dash pepper
dash Worcestershire sauce

Butter a 9×13-inch pan. Place bread slices in pan to cover bottom. Mix together ham, cheese and mustard. Put ham mixture on top of bread. Beat together remaining ingredients. Pour over bread and ham; refrigerate overnight. Bake in 325° oven for 45 minutes.
