Oatmeal Cake
Cake:
1 c. quick cook oatmeal
1 ½ c. boiling water
½ c. solid shortening or margarine
1 c. white sugar
1 c. brown sugar
2 eggs
1 ½ c. sifted flour
½ t. cinnamon
½ t. salt
1 t. soda
1 t. baking powder
Topping:
1 stick melted butter or margarine
¼ c. canned milk, cream, or milk
½ c. brown sugar
1 c. shredded coconut
1 c. chopped pecans
Soak oatmeal in boiling water. About 10 minutes.
Mix shortening, sugars and eggs.
Add flour, cinnamon, salt, soda, and baking powder. Mix well.
Add soaked oatmeal.
Grease and flour a 9 x 13 cake pan.
Spread mixture into pan.
Bake at 350 degrees for 35 minutes.
Cool slightly.
Mix together topping items and spread on slightly cooled cake.

A friend has virtually the same recipe from her Aunt, with the addition of the following section:
After spreading the topping on the slightly cooled cake – Turn on the oven broiler and place cake about 8 – 10” under the broiler until topping is bubbly and the coconut is toasted to medium brown. Watch very carefully once the bubbling begins so it does not burn.
Remove from heat, let cool and enjoy!
