Recipe: Potato Fingers or Potato Cigars

Want a fun way to use leftover mashed potatoes? Have a look at this recipe:

Potato Fingers or Potato Cigars

3 cups mashed potatoes
2 eggs, beaten
¼ teaspoon salt
⅓ cup flour
1 teaspoon baking powder
Melted vegetable shortening,  ¼ inch deep in skillet
Salt to taste

Using leftover mashed potatoes, combine eggs, salt, flour, and baking powder. Heat shortening in a large heavy skillet. Work potatoes with hands. Form into finger-length fritters and place in hot fat, frying until golden on all sides. Salt and serve hot.

Serves four.
