Recipe: Blitzkuchen / Lightning Cake

The recipe for this week is a traditional one from the Noé Kitchen House in AmanaAs noted in the book it comes from, Seasons of Plenty, “This easy layered “cake” was a summer favorite in the kitchen house, when eggs were plentiful and a “light” dessert was especially pleasing.”

Blitzkuchen / Lightning Cake

¼ cup butter
½ cup sugar
4 eggs, separated
1 cup flour, sifted
2 teaspoons baking powder
¼ cup milk
¾ cup powdered sugar
½ cup chopped nuts

Preheat oven to 350°.

Cream butter and sugar. Beat egg yolks into creamed mixture. Then beat in flour and baking powder, alternating with milk. Pour batter into a greased 9-inch glass pie dish.

Beat egg whites until stiff peaks are formed and then gently fold in powdered sugar. Spread egg white mixture on top of batter and sprinkle with nuts.

Bake for about 1 hour.
