Recipe: Ginger Crinkles

This week’s recipe makes about 4 dozen cookies.

Ginger Crinkles

⅔ c. vegetable oil
1 c. sugar
1 egg
¼ c. molasses
2 c. all-purpose flour
½ tsp. salt
2 tsp. soda
1 tsp. ground cinnamon
1 tsp. ground ginger
¼ c. sugar

Combine oil and 1 cup sugar in a large mixing bowl; add egg and beat well. Stir in molasses. Combine flour, salt, soda, cinnamon and ginger; add to molasses mixture, stirring to mix. Roll dough into 1-inch balls; roll each in remaining ¼ cup sugar. Place 2 inches apart on greased cookie sheets. Bake at 350° for 10 to 12 minutes, or until lightly browned. Remove to wire rack to cool. Yields about 4 dozen.
