Recipe: Three Toes

This week’s recipe has an interesting name! The person that submitted the recipe for the Seasons of Plenty cookbook dubbed it a favorite in the village of East Amana!

Three Toes

3 medium potatoes, slice
1 ½ tablespoons vegetable shortening
½ medium red pepper (pimento), diced
1 small onion, diced
1 medium tomato, peeled and sliced
Dash salt and pepper

Fry potatoes in vegetable shortening until about half done. Add pepper, onion, and tomato and continue frying until potatoes are golden brown. Add dash salt and pepper.

Serves four.

Note: Dubbed “Three Toes” because the dish contained potatoes, tomatoes and pimentos, it was a favorite in East Amana according to Betty Christen, who used to serve it in the East Amana kitchen house where she first learned to cook.
