Drop Cookies
4 eggs, beaten until frothy
1 cup granulated sugar
1 cup brown sugar
3 tablespoons butter, melted
3 ½ cups flour
3 teaspoons baking powder
1 teaspoon vanilla
1 cup raisins (or coconut or nuts, as you prefer)
Preheat oven to 350°.
Combine eggs and granulated sugar and beat 5 minutes. Stir in brown sugar and melted butter. In a second bowl combine flour and baking powder. Add flour mixture and vanilla to batter and beat well. Stir in raisins, coconut, or nuts. Drop by rounded teaspoons onto greased cookie sheet. Bake about 8 minutes.
Makes about 4 dozen cookies.

Note: For a rich chocolate drop cookie, simply melt 3 squares unsweetened chocolate and add to batter.
