How to Make Apfelsaft (Apple Juice)
Perhaps intended as a reminder for herself or perhaps meant as instructions for young cooks, in her recipe box, Louise Noé, Küchebaas at the Noé Kitchen House in Amana, kept this brief description of her method for making Apfelsaft. Translation by Louise Miller DuVal.
Take 12 apples, grind them in the meat grinder, place in a pot, and cover with 5 quarts water. Set behind the stove for 24 hours, pour through a cloth, add 3 cups sugar, and fill into bottles.
