This week we’ve got another apple recipe, but this one uses them for a side dish rather than a dessert!
Apple Potatoes
6 large or 10 medium potatoes, peeled
1 teaspoon salt
6 large or 10 medium apples, peeled and chopped
¼ cup sugar
1 cup bread crumbs
¼ cup butter or margarine
Cover peeled potatoes with water to which the salt has been added and cook until well done. Drain and mash thoroughly. Cook the apples in as little water as possible. When tender, mash them and add sugar. Combine mashed potatoes and apples mixing well.
Toast bread crumbs in butter (or margarine). Top apple potatoes with browned crumbs and serve immediately
Serves six.
