This is a recipe I got from my sister-in-law, Susan Barnhill. I love carrots and this is a tasty way to fix them!
Carrot Casserole
5 c. carrots
½ lb velveeta
1 stick oleo
1 sm. onion diced
¾ c crushed Ritz
Cook carrots
Layer with cheese.
Saute onion in butter.
Pour over carrots / cheese
Crackers on top
30 minutes – 350°
