Coconut Chews
¾ c. shortening (½ butter or ½ margarine)
¾ c. confectioners’ sugar
1 ½ c. flour
2 eggs
1 c. brown sugar
2 T. flour
½ tsp. baking powder
½ tsp. salt
½ tsp. vanilla
½ c. chopped walnuts
½ c. flaked coconut
ORANGE LEMON ICING
1 ½ c. confectioners’ sugar
2 T. butter or margarine, melted
3 T. orange juice
1 tsp. lemon juice
Heat oven to 350°. Cream shortening and confectioners’ sugar. Blend in 1 ½ cups flour. Press mixture in bottom of ungreased baking pan, 9x13x2-inch. Bake 12 to 15 minutes. Mix remaining ingredients; spread over hot baked layer. Bake 20 minutes longer. While warm, spread with orange-lemon icing. Cool; cut into bars, about 3×1-inch. Makes 32 bars.
Icing: Mix 1 ½ cup confectioners’ sugar, 2 tablespoons butter or margarine, melted, 2 tablespoons orange juice and 1 teaspoon lemon juice until smooth.
