Recipe: Double-Crust Pear Pie

Mace is a spice that you don’t hear much about anymore. Here’s a recipe that uses that ingredient:   

Double-Crust Pear Pie

5 pears or 3 c.
⅔ c. sugar
⅛ tsp. salt
¼ tsp. mace
1 tsp. lemon juice
¼ tsp. ginger
2 T. tapioca
3 T. orange juice
1 T. butter

Peel and slice pears into 9-inch pie crust. Add rest of ingredients and cover with top crust. Brush with beaten egg white and sprinkle with sugar. Bake 5 to 8 minutes at 450°. Turn down heat to 325° and bake another 35 minutes.
