This week we’ve got another one from family member Susan Barnhill. Note that this dessert can also be made with cherries if you’d prefer!
Larry’s Blueberry Cheesecake Dessert
Crust:
1 package graham crackers
¼ cup melted butter
¼ cup sugar
Crush graham crackers, add sugar and butter. Press into 9”x13” pan. Bake 300 degrees for 8 to 10 minutes. Cool.
Filling:
2 (8 oz.) cream cheese
1 (8 oz.) Cool Whip
1 cup powdered sugar
Beat all ingredients for middle layer and pour over crust.
Topping:
⅔ cups sugar
¼ cup plus 2 tbsp flour
½ tsp cinnamon
5 cups fresh blueberries
2 tbsp lemon juice
3 tbsp butter
Cook first four ingredients, stirring constantly until thick. Add lemon juice and butter. When cool, pour over cheesecake filling and refrigerate.
Can also be made with Cherries.
