This is a recipe that I copied from a friend – sadly, I didn’t include her name. I’ve seen variations of this recipe which include carrots. It is also similar to a recipe I often fix called a “Seven Layer Salad”.
Overnight Layered Salad
1 head lettuce
½ head cauliflower
½ bunch broccoli
1 red onion, sliced
1 c. grated Parmesan cheese
1 lb. lean bacon, fried crisp
Dressing: 1 8 oz. sour cream, 1 c. mayo, 1-2 Tsp. sugar
Combine dressing ingredients. Break cauliflower and broccoli into florets. Use equal mounts. Layer lettuce, cauliflower, broccoli, red onion, bacon and cheese.
Top with layer of dressing.
Refrigerate covered for 24 hours.
