Recipe: Party Potatoes

This recipe is from my recipe box. My long-time friend, Evonne Freeman gave me this recipe. I met Evonne when I first teaching in West Liberty. We became good friends and have remained close over the years. She is an awesome cook and has shared many recipes with me. After having these “partied up” potatoes – it is very hard to eat regular mashed potatoes! My kids always ask me to bring this dish when we have family dinners.

Party Potatoes

8 oz. French onion sour cream dip
6 oz. cream cheese
2 T butter
Salt and pepper
8 medium potatoes, peeled and boiled

Mash potatoes. Add first 3 items. Add a little milk if needed. Salt and pepper to own taste. Top with velveeta cheese. Warm through. Makes 1 ½ qt. casserole.
