Recipe: Pfüttele / Puffs

This recipe comes from the communal kitchen of Noé Kitchen House in Amana.

Recipe: Pfüttele / Puffs

1 ¼ cups milk

½ cup butter

1 ¾ cups flour

1 tablespoon sugar

Pinch salt

¼ teaspoon baking soda

¼ teaspoon baking powder

6 eggs

Lard or vegetable shortening for deep fat frying

Powdered sugar

Bring milk to a boil; add butter and stir until the butter is melted. Take off the heat and stir in flour, sugar, salt, baking soda and baking powder. Allow mixture to cool a bit; then add eggs, one at a time, stirring well. Deep fat fry by large spoonfuls. (Communal cooks used lard, but vegetable shortening will do.) Fry until golden brown. Remove and drain. Sprinkle puffs with powdered sugar and serve warm.

Serves four.
