Rahm Pastete Für Apfel Krapfen
Creamy Pastry for Apple Dumplings
4 cups sifted flour
3 tablespoons cold butter or vegetable shortening
1 teaspoon soda
1 tablespoon water
1 tablespoon sugar
1 beaten egg
1 cup sour cream
1 teaspoon salt
Apples
Brown sugar
Cinnamon
Butter
Cut butter into flour. Mix egg, cream, salt and sugar together and add to flour. Dissolve soda in water and mix into first batter. Handling very lightly and as little as possible, roll dough into two sheets as for pie crust. Then cut into 6- or 7-inch squares. Makes about twenty squares. Peel and core as many apples as needed and put one on top of each square. Sprinkle with brown sugar, dash of cinnamon and a dab of butter. Fold corners of squares over apple and place in a greased baking dish. Sprinkle with more sugar, butter and cinnamon. Pour ¼ cup of boiling water in bottom of dish and bake in 375 degree oven until apples are soft. Serve with sweet cream, or
Brown Sugar Sauce
1 cup light brown sugar
2 tablespoons flour
2 tablespoons butter
2 cups boiling water
Boil all ingredients over slow heat until slightly thickened. Serve hot over dumplings.
