Our recipe this week is from another from the cookbook, The Pocahontas Community Hospital 25 Years of Caring 1967 – 1992. If you don’t have rhubarb, you can substitute tart apples.
Rhubarb Coffee Cake
3 T. margarine, softened
1 c. granulated sugar
1 egg
1 c. flour
2 tsp. baking powder
¾ tsp. cinnamon
3 c. fresh or frozen diced rhubarb
Mix thoroughly. Place in greased 9×9-inch glass oven dish. Sprinkle with brown sugar and cinnamon. Bake at 325° for 1 hour.
May substitute raw, tart apples for rhubarb.
