Recipe: Texas Sheet Cake

This recipe was submitted to the West Liberty Sesquicentennial Cookbook by Darlene Little. Innkeeper Bonnie says, “Darlene was the mother of a good friend in college. I lived with the Littles when I student taught, and Darlene made my wedding dress.”

Texas Sheet Cake

2 c. flour
2 c. sugar
½ lb. oleo
4 T. cocoa
2 eggs beaten
1 c. water
1 c. buttermilk
1 tsp. vanilla
¼ tsp. cinnamon
1 tsp. soda

Sift flour and sugar together. Mix cocoa and water. In small pan, bring it to a boil. Pour over flour and sugar. Mix well. Add buttermilk, cinnamon, vanilla, eggs and soda. Mix well. Pour into flour & grease 16 x 17” cookie sheet. 

Bake at 350° until done – about 20 mins.
