Here’s a winter-themed sweet treat for you to enjoy:
Schneeküchlein / Snow Cakes
6 eggs, separated
6 tablespoons flour
6 tablespoons milk
Lard or vegetable shortening for deep fat frying
Powdered sugar
Maple syrup or fresh fruit
Separate eggs and beat egg yolks until light and fluffy. Stir in flour and milk, mixing until batter is smooth. Beat egg whites until very stiff. Fold egg whites into batter. Deep fat fry spoonfuls of batter until golden. Remove and drain. Sprinkle with powdered sugar and serve warm. Should be topped with maple syrup or fresh fruit.
Serves four.
