Recipe: Schnee Kuchen / Snow Cake

This cake would make for a fabulous finish to any winter meal!

Schnee Kuchen / Snow Cake

1 cup butter
1 cup sugar
½ cup milk
1 ½ cups flour, sifted several times
Juice from 1 lemon
4 egg whites, beaten till stiff
Powdered sugar

Preheat oven to 375°.

Lightly cut together butter and sugar. Then add milk and sifted flour, alternately. Beat vigorously. Flavor with juice of 1 lemon. In a second bowl beat egg whites until stiff. Fold beaten egg whites into batter. Pour into 9 x 13-inch greased and floured pan. Bake until cake springs back when touched (about 20 minutes, but be careful not to overbake). When cool, remove from pan and sprinkle top with powdered sugar.
